Your boys are so, so cute and your baby is wonderfully chubby; what a good job!
We give enzymes by opening up capsules and sprinkling the contents onto fruit sauce, then into the mouth before nursing (What are scoops?! Are you in Australia?!). My baby gets 3 with each feeding, so if it's been less than an hour, it counts. About an hour and a half, I give one more, or even two if I think she'll eat well.
It's hard, hard, hard to keep track of the time all the time. I do the best I can but sometimes she still puts out greasy poos.

We are in Australia so there are a few differences in how we do things, I think. Victor gets enzymes in fruit as well, but his enzymes are just loose in the jar instead of being inside capsules. The little scoop comes with it so I can measure out a dose of the enzymes (1 scoop per breastfeed, or for 4g of fat).
We were told there is a maximum dosage of enzymes he can have per day, which is currently around 12 scoops per 24 hours. But when he was younger, he could only have 8 scoops per day. That meant I had to pretty much put him on a schedule at 4 weeks old, so he was feeding every three hours. Before that he was just feeding on demand (but not really getting any nutrition from it!). My oldest, who does not have CF, was fed on demand.
It sounds like you have a good idea of how much your baby eats; I still find it difficult to predict how much he will want at each feed! I need to remember that things don't have to be perfect all the time and it will all be ok.
